I feel so clever today. I made my kids favorite, mac and cheese, but not. I have tried hidden veggies a ton – the color always gives it away and my picky babies won’t even taste something green.
So today I stuck about 15 carrots, 2 sweet potatoes, and 1 butternut squash in the blender. I added a cube of cream cheese, a ton of almond milk and about a cup of cheddar cheese. I blended it till it was smooth, and then boiled it till everything was cooked. It made an entire POT FULL of ‘cheese sauce’.
Once I put it on the noodles I realized it needed a lot of salt because it was more bland than a regular cheese sauce, but it looks super cheesy. The kids ate it!!
I actually froze the rest of it in ice cube trays so now I can cook some pasta and then through a cube of ‘cheese sauce’ into the hot noodles, and ta-da! Mac and cheese, errrrrr – Veggie Mac. It actually works really well because my kids don’t like hot food, and by the time the veggie cheese melts the pasta is the perfect warm temperature.
I totally tricked them, and I feel very proud of myself 💁🏼♀️
